Raita, pronounced "right-uh", is an Indian herb condiment not dissimilar from tzatziki but with different herbs and the addition of spices. Raita is served to help temper spicy food and is great with Rogan Josh or just eaten with naan.

1 c. sour cream or plain yogurt
1 Persian cucumber, small dice
1 Tbsp. cilantro
2 Tbsp. mint
1/2 tsp. salt
2 Tbsp. red onion, minced
dash pepper
1 clove garlic, minced
1/8 tsp. garam masala
pinch amchoor

Stir together everything except for the cucumber and allow to sit overnight in the fridge. Stir in the cucumber just before serving.
