Garam Masala



1 tsp. black peppercorns
1 tsp. cardamom
1 tsp. cumin seeds
1 1/2 tsp. coriander
1/4 tsp. allspice
1/4 tsp. fennel seeds
1/2 tsp. cinnamon
2 small pieces of a star anise pod
1/8 tsp. ground mace
1 dried pepper
1/2 tsp. amchoor (optional but add it if you can find it)

Cook and stir over medium heat until fragrant and toasty, everything but the amchoor. Watch carefully so they don't burn, they will quickly if not stirred. 

Place all in a blender with the amchoor and blend until a uniform powder.
