Zanahorias en Escabeche


This was a two for one week. As I was looking up how to make the Spanish tapas carrots I found two versions. Spanish and Mexican. They were really similar to each other but just different enough I wanted to make them separate posts.

5 - 6 medium carrots, sliced
1 - 2 jalapenos
4 cloves garlic
1 small white onions, sliced
4 bay leaves
1 tsp black peppercorns
2 tsp. oregano
1 tsp kosher salt
2 c. water
1 c. vinegar
Olive oil

Mash the garlic and kosher salt together to make it almost paste like. 

Place the garlic mash and everything else except the olive oil in a pot and bring to a boil. Reduce the heat and cook for 5 minutes. Chill

Strain and drizzle with olive oil.
