Mealie Soup
Mealie is South African corn soup. It's a really quick and easy dish, with stuff you probably have around the house. It's has a really nice sweet corn flavor, which should be a no brainer, but it didn't taste canned. My family loved it for lunch one spring afternoon.
3 Tbsp. butter
1 onion, chopped
2 roma tomatoes, chopped fine
1 (14.75 oz.) cans cream style corn
1 (12 oz.) bag frozen corn
2 1/2 c. water
3 bouillon cubes (Chicken or vegetable)
1/2 c. heavy cream
dash black pepper
Melt the butter over medium heat in a large soup pot. Add the onion and saute for 3 minutes until the onion is soft. Add the tomato and keep cooking for an additional 5 minutes. The tomato should be broken down some.
Add the can of creamed corn, the frozen corn, water, bouillon, and pepper. Simmer for 15 minutes.
Stir in the cream, check for seasoning and adjust as needed. Heat over medium low to heat through. Serve with crackers.
