Layali Lubnan
Layali lubnan translates to Lebanese Nights. Lebanese Nights is a patriotic layered custard that incorporates the green, red, and white of the Lebanese Flag. The first layer is a semolina custard, then a floral whipped cream layer and finally chopped pistachios.
2 c. milk
1 c. heavy cream
1/2 c. sugar
3/4 c. semolina
2 eggs
1 tsp. vanilla
3/4 c. heavy whipping cream
1 Tbsp. sugar
pinch Xanthan gum
2 Tbsp. Elderflower cordial
1/4 c. chopped pistachios
Sugar syrup
Combine the milk, cream, sugar, and semolina in a medium saucepan. Cook over medium heat, whisking constantly, until the mixture starts to thicken.
In a separate bowl beat the eggs, once the milk and cream mixture is thickened whisk half in to the egg mixture a little at a time. Return the egg and milk mixture to the remaining custard in the pot on the stove. Continue cooking the mixture oven medium heat until thickened even further.
Pour the thickened mixture in to a 8x8 inch pan. Place in the fridge until cooled and thickened.
Once the mixture is cool whip the cream, sugar, and cordial until slightly thickened. Add the pinch of xanthan gum and keep beating until stiff.
Spread the whipped cream over the top of the custard and sprinkle with pistachios.
Serve with sugar syrup.
