Tarte flambée or Flammkuchen
I've been making my own pizza for a number of year always playing around with various crusts and sauce recipes. So I finally found the crust recipe that I loved and decided to use it for this flat bread. It's pretty simple, a creamy cheese base with pepper and nutmeg topped with thinly sliced onions and bacon. In French it's called Tarte flambée but just over the border in German they make the same thing only they call it Flammkuchen.
1 recipe dough
1/2 block cream cheese
1 cup plain yogurt or sour cream
1/2 tsp salt
dash black pepper
dash nutmeg
1 small red onion, sliced thin
6 uncooked strips bacon, sliced thin
Stretch the dough in to three squares. Very lightly grease the baking pan and move the stretched dough on to the pan.
Beat the cream cheese until smooth and beat in the salt, pepper, and nutmeg. Then mix in the plain yogurt.
Spread a third of the mixture evenly on top of one of the crusts. Sprinkle the top generously with thinly sliced onions and two of the bacon strips.
Bake at 450* until the edges are browned and the bacon is cooked.
