Huli Huli Chicken
Another Hawaiian favorite, "Huli" means turn. It really caught my eye though because "Huli" is what a friend calls me, so this is now my chicken. And it will be, I think this will defiantly be a staple for grilling in the summer and cold winter days when we are dreaming of the tropics.
18 chicken drumsticks
1 c. unsweetened pineapple juice
1/2 c. dark soy sauce
1/3 c. honey
1/2 c. ketchup
2 tsp. fresh ginger
6 cloves garlic, minced fine
Generous dash of pepper
2 tsp cornstarch
Green onions or chives, sliced
Combine everything except for the chicken, cornstarch, and green onions in a bowl, whisk it together really well to combine everything. Take extra care to make sure the honey is mixed in. Remove 1/2 a cup of the marinade and set aside. Put the marinade and the chicken in a large sealable freezer bag in the fridge 2 - 3 hours.
Heat your oven to 400 and remove the chicken from the fridge. Grill on both sides until starting to crisp. Move the chicken to a rack in the oven and bake at 400 for 25 - 30 minutes until the chicken is tender.
About 5 minutes before the chicken comes out of the oven combine the cornstarch and reserved marinade. Cook over medium heat until bubbly and slightly thickened. When the chicken comes out of the oven, brush with the thickened sauce, sprinkle with green onions or chives, and serve.
