Batata Harra
Amazing recipe alert! I will be making a lot more of these, that is for sure.They were very savory with the cilantro and lemon adding a nice twist.
2.5 lb potatoes, diced
1/4 c. oil
1/2 c. cilantro, chopped
6 cloves garlic, minced
1 green onion, sliced thin
1 tsp pul biber, Aleppo, or gochugaru
Salt and pepper to taste
half a lemon
Preheat oven to 400
Add about half the oil to a skillet and add the garlic over medium low heat just to heat it through. Check for the oil, it tends to absorb so so add more if you need it, this is going to be used to coat the potatoes also, so more than you would normally use for just that amount of garlic and greens. Add in the cilantro and green onion and stir over the lowish heat until the cilantro is wilted, add the peppers and check again for oil, don't let it get dry.
Toss the potatoes with the oil mixture and salt and pepper, mixing really well to spread the mixture evenly through the potatoes. Roast at 400, stirring about halfway through.
Once the potatoes are almost done, starting to crisp but not completely cooked, squeeze the lemon over the top and stir again. Continue roasting until the potatoes are cooked.
Serve and enjoy.
