Confit Byaldi aka Ratatouille



I think the Disney movie Ratatouille inspired a lot of people to try the dish sliced this way instead of the soggy looking French stew. After some extensive research. And by "extensive" and "research" I mean 4 minutes on google, I found this is Thomas Kellers version of confit byaldi. A Turkish dish with the same flavors as the French stew. Which to me is fascinating to read. I went with the Smitten Kitchen version for a French themed girls night I hosted, back when I actually had days that weren't already taken and crammed. I do like the idea of serving this over couscous or rice for a full meal. I was surprised, every person that tried it liked it, even those who said they don't like eggplant or zucchini.
