Egyptian Cucumber Feta Salad
In an effort to find other cooks and bloggers who love to explore through food I joined a Facebook group for food bloggers and came across a blog titled "Seduction in the Kitchen". Not only did she have a delicious looking recipe right as I am in the middle of a cucumber salad phase I noticed after looking around that she is actually the author of several recipes I already had pinned to try. This was another delicious salad that my kids and I enjoyed one day with dinner.
Seduction in the Kitchen: Egyptian Feta Cucumber Salad
Please head on over and take a look at her blog, the story about where the recipe came from is fun. Also if you have cucumbers with a high moisture content she has a method for that too. Israeli ones are not at all though so I skipped that part.
4 small Israeli cucumbers or 1 - 2 large English ones
4 large green onions, sliced thin
2 tsp Lemon juice
2 Tbsp olive oil
1 Tbsp chopped fresh mint
4 oz. feta cheese
Salt and pepper to taste
In a large bowl combine the lemon juice, olive oil, green onions, and fresh mint. Top with the feta and some black pepper and stir it up a little with the fork.
Slice the cucumbers and toss with the dressing. Taste for salt but the feta is fairly salty and I didn't feel like they needed any.
Cucumber salads are one of my favorites! I haven't used mint and will have to rectify that! Looks good!

ReplyDeleteThis salad has a scrumptious Greek flare. The feta paired with lemon-balsamic dressing makes me want to eat some more, which is fine because it’s a super healthy.
