Bruschetta




So simple this hardly needs a recipes. Which is good, I don't have one, I did it by taste. 

Hearty bread, cut on the bias
1 clove garlic
olive oil

Tomatoes, chopped
Green onion, sliced
1 garlic clove
coarse salt
black pepper
olive oil
Lots of fresh basil, chiffonade

I life to prepare the tomato first so as soon as the bread comes out of the pan you can top it. With a mortar and pestle smash the garlic and coarse salt with a little olive oil until it's smoothish. Add some of the basil and smash with and up and down motion. Not side to side, you want to bruise it some but not mash it up. Combine the chopped tomatoes, garlic mix, green onion, salt and pepper, remaining fresh basil and just enough olive oil to lightly coat. Set aside. 

Heat the olive oil in  a non-stick pan, use quite a bit of it, the bread will absorb a lot. cut the garlic clove in half and rub each side of the bread with it. Then place in hot oil and cook until golden and crusty. Flip and cook on the other side, making sure there is enough oil in the pan. 

Top with the tomato mix and serve immediately.
