Malaysian Curry
I'm in a really large Malaysian cooking group online and I've gotten so many wonderful ideas. A really popular dish is just called "curry" with a local curry mix typically eaten with roti jala. Roti jala literally translates to "net bread" and is a lacy coconut and turmeric crepe.
6 chicken thighs
3 potatoes
1 large white onion
1/4 c. babas curry powder
olive oil
1 can coconut milk (reserve a 1/3 cup)

Chop the onion really fine with a food processor.
Heat the oil in a large skillet with at least 3 in sides. Add the onion and curry powder and cook, stirring, about 5 minutes.
Push the onion to the sides to create 6 spots for chicken and add a little more oil to each. Season the chicken with salt and pepper and add to the skillet. Brown on both sides and top with the coconut milk and enough water to cover.
Peel the potatoes and cut in half. Add them to the pan with the chicken.
Cover the pot with a lid and simmer for 30 minutes. Check to make sure the chicken and potatoes are tender. Serve with rice and roti jala.
