Hawaiian Sausage and Cabbage Soup
While visiting a Polynesian Cultural Arts festival last week I purchased a Portuguese sausage. I looked it up to see what it was and what to make with it and it looks like the sausage is a local version of Portuguese linguica. Two recipes popped up for the sausage. This one from Cooking Hawaiian Style and just sautéing them and eating with rice and eggs for breakfast. So naturally I tried them both.
10 oz. hot or mild Hawaiian Portuguese sausage, sliced
1 onion, chopped
4 cloves garlic
1 (8 oz.) can tomato sauce
8 c. chicken broth
4 large red potatoes, chopped
1/2 small head of cabbage, sliced thin
2 carrots, grated
1/2 tsp. ground coriander
1/4 tsp. allspice
1/4 tsp. black pepper
1 Tbsp. grainy mustard
Saute the sausage and the onion until the onion is tender. Add the garlic and cook for 30 seconds, just until fragrant.
Add the tomato sauce and saute for 5 minutes, stirring constantly. Add the mustard and then chicken broth.
Add the spices and vegetables and simmer until the potatoes and cabbage are cooked.
Serve with more mustard as desired.
