Agua fresca is better than water but not juice. It was more akin to lemonade. It was deliciously fruity while still being light.
3 Tbsp. sugar
2 sprigs of fresh mint
Cut the outside off the pineapple and chop. Removing the core isn't necessary since you are grinding it.
Place the pineapple in the blender along with the sugar and lime juice. Cover with water. Blend until the pineapple is in fine pieces. Strain through a fine mesh strainer. Add the mint to the liquid and chill until cold. Serve over ice.
But wait! Don't throw out the ground pineapple bits. Add 1/2 c. sugar and two cups of water. Simmer for 30 minutes until most of the liquid is absorbed. Add 2 tsp instant clear gel and chill. Use like jam or as a topping on ice cream.
