Turkish Stuffed Apricots
This particular recipe is the absolute perfect addition to any party, dinner table, or snack time. It's so simple and yet so, very, extremely, delightful. I do really like clotted cream, so that might be part of it. But the candied apricots with the orange blossom syrup are just something else.
3 oz. dried apricots
1 1/2 c. water
1 1/2 c. sugar
2 Tbsp. lemon juice
1 Tbsp. orange blossom water
1/2 c. clotted cream (homemade or store-bought)
Combine the water, sugar, and lemon juice and bring to a simmer. Add the apricots and simmer for 30-45 minutes, or until the apricots are plump, slightly darker, and glossy. Remove from the syrup and set aside to dry.
Use your fingers and separate the dried apricot, it should already be split from when the pit was removed. Fill with clotted cream and place on a tray. Chill until ready to serve.
Serve drizzled with the reserved cooking liquid and optional chopped pistachios.
