Kabacu Salati - Latvian Zucchini Relish

      This Latvian recipe came up frequently when looking up Latvian food. It's actually delicious on its own, but also quite good on potatoes or with pork. 

2 Tbsp. oil
1 Tbsp. mustard seed
1 large zucchini, grated
1 carrot, grated
1 large onion, sliced thin
1 tomato, chopped
1 red pepper, sliced thin
2 Tbsp. garlic paste
1/2 tsp. salt
1/4 c. vinegar

Heat the oil in a large skillet. Add the mustard seeds and cook, stirring frequently, until they start to pop. 

Add all of the vegetables and the garlic paste and reduce the heat to medium-low. Cover that pan and cook, stirring every 10 minutes. Cook for 30 minutes. 

Turn the heat to high and add the salt and vinegar and bring the vinegar to a boil. Turn the heat to medium-low and simmer for 5 minutes. 

Allow to cool. Can be served hot or cold.
