Ga Ro-ti - Vietnamese Roasted Chicken


Vietnamese Ga ro-ti is simply Vietnamese roasted chicken. What makes it special, and what my family claims is their favorite thing I have made so far, is the unique blend of seasonings.  Spiced but not spicy with a lot of flavor. It's delicious with a cucumber salad, rice, and lots of fresh fruit.



5 large chicken and thigh pieces
2 Tbsp. Soy Sauce
1 tsp. black pepper
1 tsp. sesame oil
1 tsp. garlic
1 green onions, white part only, sliced
1 tsp. shallot powder
1/2 tsp. sugar
1 tsp. Chinese 5 Spice
1 Tbsp. honey
1 Tbsp. vinegar

Combine everything from the soy sauce until the Chinese 5 spice powder. Rub on to the chicken and use a knife to puncture the meat to drive the seasonings in. Place in a plastic bag and refrigerate for 30 minutes or overnight. 

Remove from the oven and place upside down on a metal baking tray with sides. Bake at 400 for 30 minutes. Combine the honey and vinegar in a bowl. Turn the meat over so it is right side up and brush on the meat. Return the pan to the oven and keep baking an additional 30 minutes. Brush the meat with any remaining honey mixture or drippings from the pan. Bake another 30 minutes.

Remove from the oven and serve.
