Argentinian Revuelto Gramajo #EatTheWorld



Hola! Bienvenidos!! Come and enjoy some Argentinian food with this months Eat the World challenge from CulturEatz. I did a little digging, and by that I mean I messaged my sister, to figure out what the name mean since google could only translate one of the words. Revuelto means scrambled and Gramajo is the name of the general the dish is named after. So Revuelto gramajo is "scrambled eggs Gramajo style".

And what a delicious style they are, somwhere between hash and French fries. It's said to be a hangover cure but since I don't drink it's getting consigned to the brunch category in my house. And the best part is the recipe is more like a guideline and not necessarily meant to be followed exactly. Double it, triple it, change the ratio, add more jamon, whatever you want.

Buen provecho!!!

4 medium baking potatoes
3/4 c. oil
4 eggs
6 oz. jamon serrano, sliced
4 oz. cheese, shredded
2 green onions, sliced
Salt & pepper to taste

Peel and julienne the potatoes. Cover with water in a microwave safe bowl and microwave for 5-6 minutes, just to soften while the oil is heating. 

Heat the oil in a heavy bottom pan with 2" sides. When the oil is hot drain the potatoes and add to the pan. Cook over medium oil while stirring occasionally. When the potatoes are almost done, soft in the center and golden in spots, add the jamon to crisp slightly. 

Drain the oil from the pan and lightly salt the potatoes. Push the potatoes and jamon to one side to make room to cook the eggs. Whisk the eggs with a pinch of salt and add to one side of the pan. all to set mostly before using a rubber scrapper to break it up. When the eggs are almost cooked mix them in with the potatoes. 

Remove the skillet from the stove and add the cheese to the pan. Toss to mix in and divide between 4 plates. Top with sliced green onions and serve.

  3. Hi Julie, this would be great breakfast to have before going out to shovel all that snow this winter. This reminds me of a skillet scramble with some latin flair. Beautiful!

  6. Oh, my, I want to dive into that dish! It looks SO colourful (and it contains my favourite food group: french fries!) I could eat the whole plateful and just pretend it's a salad, right?
