Butter Mochi
Popular in Hawaiian and Japan butter mocha is a delightfully chewy cake. Wonderfully buttery and sweet and super simple to throw together.
1 stick butter, melted
2 1/4 c. sugar
4 eggs
1 (14 oz.) can sweetened condensed milk
1/2 cup water
2 Tbsp. baking powder
1 (13.5 oz.) can coconut milk
1 tsp. vanilla extract
1 (16 oz.) box mochiko flour
Mix together the melted butter, sugar, and eggs. Mix until combined. Whisk in the condensed milk, water, and vanilla extract.
Hold a colander over the bowl of combined ingredients. Add the mochiko and baking powder. The rice flour doesn't really clump up but the baking powder can. Sift in and stir them together. Add the coconut milk and keep stirring until smooth.
Pour in to a greased 9x13 pan. Bake at 350 in a pre-heated oven for 50 minutes. Remove from the oven and sprinkle with sesame seeds. Allow to cool completely and cut in to squares.
