Carne Afanada
This dish, carne afanada, is more like fusion food. The brilliant minds at My Colombian Cooking used some of the traditional basis of Columbian cooking and used it to flavor and season meatloaf, something not typical of Colombian Cuisine.
1 lb. ground beef
1 lb. ground pork
3 eggs
1/2 c. breadcrumbs
1 tsp. cumin
1 small chopped red onion
1/2 tsp. black pepper
1 tsp. salt
2 c. hogao
2 c. chopped tomatoes
1 medium onion
2 cloves garlic
Vegetable oil
1 Tbsp. white vinegar
1/4 tsp. beef bouillon powder
1/2 tsp. cumin
Salt & Pepper to taste
In a bowl combine the eggs, breadcrumbs, and hoago. Let stand for 10 minutes. Add the beef, pork, cumin, onion, pepper, and salt. Use your hands to combine thoroughly. Shape in to a loaf
While the eggs and breadcrumb mixture is sitting heat the oil in a large skillet and add the onion and cook for 2 minutes. Add the garlic and cumin and saute for about 30 seconds, just until fragrant. Add the tomatoes, vinegar, bouillon powder, salt, and pepper. Simmer for 10 minutes.
Pre-heat the oven to 350
Add the formed meatloaf to the pan of tomatoes and cook for 10 minutes. Spoon the tomato sauce over the top. Place in a preheated oven and bake for 50 minutes.
Remove from the oven and cover with tin foil. Let rest for 10 minutes before slicing.
