Cheese Blintz
Crepes are a go to in this house for a fun and easy dessert. One I haven't gotten tired of by any means, but trying something new with them is also welcome. I got lucky and there was an eastern European market near me for the farmers cheese but if that isn't an option it tasted quit similar to cottage cheese, just drier. I would use cottage and drain it. Quark and mascarpone are also delicious options.
12 crepes
Butter to fry
Fruit Sauce
21 oz. farmers cheese
15 oz. ricotta
1/2 c. sugar
1 tsp. vanilla extract
zest of 1 lemon
In a food processor combine the cheeses, sugar, extract, and lemon until smooth.
Heat the butter in a skillet. Add a 12th of the cheese mixture to the top of one crepe. Fold the sides in and then roll like a burrito.
Fry in the butter until golden and then flip over and fry the other side. Serve warm topped with a fruit sauce of your choosing.
