Icelandic Skyr


Skyr is like yogurt. But not. Because it's better. Waaayyyyyyy better. It's cultured, it's dairy, but it's thicker, creamier, and tangier. It even has more protein and less sugar while still managing to be tastier.

According to both Siggi's and Icelandic Provisions skyr has been made in Iceland for over 1,000 years. Skyr uses different cultures than yogurt to develop it's creamier taste an is strained to thicken it. It uses four times the amount of milk in regular yogurt.

I don't even like yogurt and I like skyr. No, sadly, this isn't a recipe, I just wanted to highlight this regional favorite.
