Callaloo is a Jamaican green recipe that is perfect with fried chicken. Most commonly made with spinach a few recipes are floating around with other greens, I jumped on because I like the texture of sturdier greens when cooked.

1 small onion, sliced
2 cloves garlic, minced
1 roma tomato, chopped
2 Tbsp. coconut oil
1/4 tsp. thyme
1 habanero
1/2 tsp. salt
black pepper
1 bunch collard greens, sliced
2 Tbsp. coconut milk
1 green onion, sliced

Heat the coconut oil in a pot with the onion, garlic, habanero, and tomato. Saute until the onion is translucent. 

Add the greens to the pan and keep cooking over medium heat, stirring occasionally, until tender. This took me about 20 minutes. Once the greens are tender stir in the coconut milk and green onions and heat through. Taste for salt and season as needed.
