West African Style Bongo Chicken
I have never cooked chicken this way before but I can't wait to again. Placing it all on the pan and baking for 90 minutes yielded a flavorful and tender chicken. Slightly adapted from Fred in the Kitchen, go check out his site to enjoy other West African cooking.
16 chicken legs
1 red onion
1 tsp. salt
4 garlic cloves, peeled
2 Tbsp. soy sauce
1/2 c. peel ginger
1 tsp. paprika
2 - 4 habaneros
2 Tbsp. vegetable oil
Combine all except for the chicken in a food processor until you have a paste. In two gallon size ziplock bags or a large Tupperware combine the chicken and the mixture from the food processor. Let sit at least 30 minutes or overnight. I like to do this the night before for easy meal prep at dinner time.
Place on a pan and add 1/4 cup of water to the bottom of the pan. Place in a preheated oven at 350 and bake for 90 minutes or until golden and the chicken is cooked.
