Kimchi Bokkeumbap
This is kimchi fried rice for one, and really is more of a guideline. Feel free do double and triple, add more or less kimchi, a fried egg instead o the crepe, etc...
1/2 c. uncooked white rice
1/2 c. kimchi, chopped
Vegetable oil
2 tsp. gochujang
1/2 tsp. sesame oil
1 egg
Sesame seeds
Cook the rice in a pot with a cup of water and a little salt. Simmer, covered, until tender. Remove from the heat and leave the lid on the pot while cooking the kimchi.
Heat the vegetable oil in a separate pan over medium heat. Add the kimchi and cook, sautéing, for about 5 minutes.
Add the rice and the gochujang. Cook, stirring, until the kimchi and gochujang are evenly mixed with the rice and heated throughout.
Drizzle the top with sesame oil. Transfer to a plate or bowl.
Reheat the pan and whisk together the egg, a little water, and a pinch of salt. POut the eg gin the bottom of the hot pan and swirl to coat. Reduce the heat so it doesn't brown and cook throughout, flipping if desired.
Slice the egg crepe thin and top the rice with the egg.
Sprinkle with sesame seeds and enjoy.
