Fasolakia


It should come as no surprise that I LOVE onions, green beans, and tomatoes. First was the Armenian version, delicious BTW. Then the Lebanese version. And now this. Deliciously seasoned and stewed down in a tomato olive oil sauce. They are great and traditionally eaten with flat bread but I also really enjoy them with brown rice.

1/3 c. olive oil
1 medium onion, chopped
2 medium tomatoes, chopped
1/2 tsp garlic powder
1 tsp. cumin
1 tsp. oregano
1 c. water
1 bay leaf
12 oz. frozen green beans
2 large potatoes, peeled and chopped
2 tsp. lemon juice
fresh chopped parsley

Set your instapot to saute and add the olive oil and heat. Cook the onion until it's translucent and add the tomatoes, garlic, cumin, and oregano. Saute for about 5 minutes, stirring constantly. 

Add the water, bay leaf, green beans, and potatoes. Put the lid on top and cook for 7 minutes on regular pressure. Quick release and stir in the lemon juice and parsley.
