Russian Cucumber Tomato Salad - Pу̏скӣ Салат
I pretty much always have cucumbers on hand. Israeli chopped salad is a family favorite, something we eat several times a week. I look around at a lot of recipes and as I have I've noticed a lot of cultures have a dish comprised of cucumbers and tomatoes. This is an Eastern European version.
1 large English cucumber, sliced thin
1 large tomato, chopped
1/2 red onion, sliced thin
OR 2 green onions, chopped
3 Tbsp. mayo
3 Tbsp. sour cream
1 tsp. apple cider vinegar
1 - 2 tsp. fresh dill
OR 1/4 tsp. dried dill
1/8 tsp black pepper
1/4 tsp. salt
Whisk together the mayo, sour cream, vinegar, dill, salt, and pepper.
Add in the cucumber, tomato, and onion. Toss with the dressing and transfer to a serving dish.
Can be served right away or chill in the fridge for up to 4 hours.
