Pancit Bihon


This is one of my favorite Filipino dishes. My kids love it, HusbandMan loves it, to be honest I haven't met anyone that doesn't enjoy pancit. It can be made with an size rice noodles though the think sticks are more often used. The thicker fettuccini noodles do taste just as good. Any vegetables you want to use here work, I've added bean sprouts, red peppers, kale, spinach, and bok choy at times and it all works. Use whatever you have on hand.

1 large onion, chopped
1 carrot, julienned
1/2 small head of cabbage, sliced
1 - 2 c. broccoli 
4 green onions, sliced
3 cloves garlic, minced
Oil
1 package rice noodles
3 chicken breasts, cooked and shredded OR Leftover chicken
1/4 c. soy sauce

Place the rice noodles in a bowl and cover completely with very hot water. I use tap water but mine gets scalding. If not, just as hot as you can get it. Let the noodles soak while you prep and cook the vegetables. 

Place a generous amount of oil in a large skillet. Add the onion and saute a few minutes. Add the carrot and cook an additional 2 - 3 minutes. Add the cabbage, broccoli, and garlic and cook until the cabbage is crisp tender. The cabbage and broccoli should be bright green. 

Drain the noodles and add them to the skillet with the green onion, soy sauce, and chicken. Cook, stirring constantly until the noodles are tender. If the noodles start to stick add water or more soy sauce to the pan. 

Serve with soy sauce to taste.
