Croquettes




These were pretty simple, a bit of work but not anything hard. Start by sauteeing an onion in quite a bit of oil, what good recipe doesn't start with that? Add a lot of flour and cook. Then add some milk. Not a ton, you want the bechamel to set up pretty thick when chilled. Season with salt, pepper, and nutmeg. Stir in a lot of shopped roasted chicken, ham, and manchego cheese. Put in a pan to chill until cold and thick. Make sure and press the plastic wrap in to the sauce so it doesn't form a skin. 

Once it's cooled dip in flour, then egg, then fine breadcrumbs and fry until golden.
