Spanish Chicken

This dish was so simple in both preparation and flavor and yet it was delicious. The delicate flavor of the fresh tomatoes and the eggplant together are both front and center in this dish thanks to the omition of lots of seasonings. Which I normally love, but did not miss here. 

I loved it with both the rice and with the ciabatta bread heated the next day.
