Koreiskaya Morkovka
1/4 c. oil
1 onion, sliced
4 carrots, grated
3 Tbsp. apple cider vinegar
1 tsp. honey
1 tsp. garlic paste
2 tsp. cumin seeds
1 tsp. fresh grated parsley
1/4 - 1/2 tsp. salt
1/8 tsp. black pepper
Place the oil in a pan and bring to medium heat. Add the onions and cook, for at least 15 minutes. Only stir every few minutes. Once the onions are browning remove them from the heat and strain the onions from the oil. Place the oil in a metal bowl and do not scrape out the pan.
Place the pan back on the heat and add the coarsely ground cumin seeds to the pan. Once the cumin is fragrant remove from the heat and scrape the cumin and remaining oil into the bowl of oil you removed a few minutes before.
Add the vinegar, honey, salt, pepper, and garlic paste to the oil and whisk to combine. Add to the carrots with the fresh parsley and toss to combine.
