Za'atar Spice Mix


Za'atar is an herby and tangy spice mix that is synonymous with Middle Eastern cooking. Traditionally it was made with hyssop, which has a really distinct and wonderful flavor, but modern blends use a combination of thyme and marjoram. I have found that summer savor is really good there as well and is closer in flavor to the hyssop. So use hyssop or a combination of the other three spices. 

1/4 c. green herbs (hyssop, thyme, marjoram, or summer savory)
1 Tbsp. sumac
2 Tbsp. sesame seeds, toasted
1 tsp. salt

Place the herbs and salt in a food processor and mix until it is a fluffy and chopped but not completely powdered.  Remove and add the sumac and sesame seeds and mix. 

Store in an airtight container.
