Aji Verde
Aji verde is a spicy Peruvian condiment that is great on wraps, or rice, on meat, or as a dip for veggies or corn ships. Really, it's great on just about anything.
1 - 2 bunch(s) cilantro
1 clove garlic
1 jalapeno pepper
1/2 c. mayo
1/4 c. cotija cheese (or grated hard cheese)
2 Tbsp. aji amarillo paste
1 lime
1/4 tsp. salt
2 Tbsp milk (optional)
Heat a stove burner to medium high and place the jalapeno directly on the burner. Char, until blackened, on all four sides. Remove from the stove top and place in a sandwich bag with a zipper seal. Let steam for 5 minutes.
Meanwhile add the garlic to a food processor along with the cilantro and process until both are in small bits. Add the mayo, cheese, aji paste, juice of the lime, and the salt. Process until smooth.
Remove the jalapeno from the bag and scrape the sides to remove the charred peel. Cut in half to scrape the seeds out and chop in to a few big pieces. Add to the blender and process again until smooth.
Thin with milk is desired.
