2 lb. yellow potatoes
1 large rutabaga
2 large carrots
1 stick butter
Salt to taste
Bring a large pot of salted water to boil. Pre-heat the oven to 400
Cut the rutabaga, carrots, and potatoes in to cubes. Slice the leeks
Place the rutabaga and carrots in to the pot of boiling water. Simmer for 15 minutes and then add the potatoes and leek. Simmer for an additional 25 - 30 minutes or until all the vegetables are tender.
While the vegetables are cooking place the sausages in the oven and cook for approximately 25 minutes or until cooked through.
Gently drain the vegetables and place in the bowl of a mixer with the stick of butter. Beat the vegetables and the butter until they are a coherent mash. It should be slightly chunky still.
Place the mash in to individual bowls and top with sliced sausage and a pat of butter.
