Mexican street corn is a popular treat that takes advantage of seasonal produce and regional flavors.

6 ears of corn, grilled or boiled
2 Tbsp. mayo
2 Tbsp. sour cream
1 lime
Chopped cilantro
Tajin sprinkle
Crumbled cotija cheese

Stir together the sour cream and mayo until combined. 

Spread each ear of corn with the cream mixture. Sprinkle with cilantro, cheese, and tajin sprinkle. Cut the lime in half and squeeze over the corn cobs.
