Hoppin' Johns
This is traditionally served over rice but we are having that tomorrow with dinner so I went with cornbread. We loved it that way.
Bacon grease
1 onion, chopped
2 stalks celery, chopped
2 cloves garlic, minced
2 smoked sausages, chopped
1 cans black eyes peas
green onion to garnish
Heat the bacon drippings. I used leftover from the other day, if you don't have any the bacon would be really good crumbled on top of this or regular oil works too.
Once the oil is hot add the onion and celery. When they are tender reduce the heat and add the garlic. Cook the garlic for 2 minutes just until fragrant and then add the sausage and continue cooking another 3 - 4 minutes. Drain one can of the peas but not the other. Add both cans, including the one liquid from the one and simmer for 10 minutes stirring often.
Serve topped with green onions and hot sauce
