Červená Kapustová Polievka - Slovakian Red Cabbage Soup
Welcome to the second recipe of the Slovakian series. this recipe was actually my favorite out of all of the dishes I tried. I love cabbage soup, I love vinegary soups, and I love paprika. This recipe was so simple, and yet it had a great depth that meant it was well-rounded, delicious, complex, and sour. It was also very economical. And nutritious. And just an all-around great recipe to have on hand.
Red Cabbage Soup Recipe
1/2 head cabbage, sliced
1/4 c. oil
6 c. water
1/4 c. vinegar
1 Tbsp. flour
2 large pinch nutmeg
2 large pinches, white pepper
6 oz. tomato paste
1 1/2 tsp. salt
3 Tbsp. sugar
Heat the oil in a soup pot over medium. Add the cabbage and cook, stirring, until tender. You want to cook and wilt the cabbage without browning it.
Add the flour and cook for a minute. Add the tomato paste and cook, stirring. Cook for 2-3 minutes, stirring constantly. Add the remaining ingredients and simmer for 25-30 minutes.
Taste and adjust the salt/vinegar/sugar ratio to taste. Serve immediately.
We love cabbage around here and this soup sounds wonderful.
