Norwegian Cream of Cabbage Soup


     Anyone who has been around here long knows that I am a huge fan of David Lebovitz. In fact one of his recipes was the first one I posted on here when I started, and one that is in desperate need of an upgrade. But that is for another time, right now we are gonna talk about this amazing soup. I know I love cabbage and I know I love potatoes. And caraways seeds of course. And just about anything with cream. So this was really high on my list of things to make. Not surprisingly, now that I have made it, it's even higher on my list of things I still want to make. My kids want me to make it again, I want to make it again, it will probably be lunch at least once a week for a while.

     I did notice his recipe seemed to use a lot of pots (3!!) and I don't like soup that uses more than one. I did change things a little and cut it down to 1. I hope I can be forgiven. And if anyone thinks my way wont work they are welcome to make a pot for me using all three and bring me a bowl to compare. I would be more than happy to do that.

Cabbage Soups


Adapted from: David Lebovitz Cream of Cabbage Soup

1 large head cabbage, sliced in ribbons
3 medium potatoes, cut in to cubes
5 c. water
5 chicken bouillon cubes
2 tsp. caraway seeds
4 Tbsp. butter
1 medium onion, chopped
3/4 c. heavy cream
Generous dash black pepper

Chives, green onions, or parsley, to garnish

In a large pot bring the water, bouillon, and potatoes to a boil. Reduce the heat and simmer until the potatoes are tender. Once they are tender remove from the heat and allow to cool slightly. Place in the vitamix pitcher and set aside. 

Heat the butter in the soup pot and add the onion. Cook until translucent. Add the cabbage with the caraway seeds, and a generous dash of salt and black pepper. Cook, stirring infrequently, until the cabbage is cooked through and browning in spots. Remove 1/3 of the cabbage and set aside. 

Add the cabbage to the blender with the potatoes and their broth. Puree until completely smooth. Add back to the pot with the cream and heat through. Stir the reserved cabbage in to the soup. 

Serve topped with chives, chopped green onions, parsley and/or more caraway seeds.
