Middle Eastern Turmous Beans


Whether you call them tremocos, lupini, or turmous depends on where you are from. The seasonings vary by region as well, but the base is still the same. Prepping the beans takes a bit of time but isn't particularly labor intensive and they last a long time in the brine in the fridge.

This style uses the flavor popular in the middle east with lots of delicious cumin, lemon, and olive oil.

2 c. perpared lupini beans
1 Tbsp. lemon juice
2 tsp. olive oil
1/2 tsp. ground cumin
Pinch hot paprika
Pinch black pepper
2 Tbsp. chopped fresh parsley

Whisk together the lemon, olive oil, cumin, paprika, and black pepper. Toss the dressing with the beans and sprinkle with parsley. Serve.
