Chinese Fresh Red Ham
1 pork picnic (6-8 lb.)
3 Tbsp. oil
2-in knob fresh ginger
4 large green onions, cut in half lengthwise
1 c. soy sauce
3/4 c. sherry
5 c. boiling water
1 tsp. salt
2 tsp. turbinabo sugar
2 star anise pods
1 stick cinnamon
2 cloves garlic
Heat the oil in a medium skillet, one that will easily hold the meat and liquid. Add the ginger and onion to the pan and heat for 30 seconds. Add the meat to the pan and sear on all four sides, not until golden, just until white. Make sure the fat cap is on the top.
Pour the soy sauce and 1/4 cup of the sherry over the top of the pork. Pour the boiling water over the top and add the salt, sugar, anise pods, cinnamon, and cloves of garlic. Bring to a boil and then reduce the heat to medium. Cover and simmer. Turn the meat every hours for 5-6 hours or until the meat is fall apart tender.
