Tave Me Presh
This Albanian recipe is delicious and super easy to make. Having made it several times I do prefer the lamb version but ground beef was still delicious.
3 Tbsp. olive oil
3 large leeks
1 red pepper, chopped
2 Tbsp. tomato paste
1/2 tsp. paprika
1 clove garlic, minced
1 c. beef broth
Salt and pepper to taste
Heat the oven to 375*F.
Trim the root and the tough green part of the leeks. Cut in half lengthwise. Rinse really well between the layers to remove grit. Slice the leeks.
Heat the oil in a skillet over medium high. Add the leeks and cook, stirring, until they are broken down slightly. Add the ground lamb, red pepper, and salt and black pepper. Cook, breaking up the meat while cooking. Once the meat is about 75% cooked add the tomato paste, paprika, and garlic. Cook for 2 minutes more.
Add the broth and place the dish in the oven for 1 hour and until most of the liquid is evaporated.
Serve with flat bread.
