Sharena Sol

Sharena Sol is Bulgaria's most well loved spice mix. Every region and family will have their own blend but the basics are summer savory, paprika, and salt. 

3 Tbsp. Summer savory
1 1/2 Tbsp. Paprika
1 Tbsp. cornmeal
1 Tbsp. salt
2 tsp. fenugreek leaves
1 tsp. pepper

In a dry pan toast the corn meal, stirring constantly, until fragrant and just starting to darken slightly in spots. 

Place everything in a food processor and run until the summer savory and fenugreek leaves are crumbled. 

Store in an airtight container.
