This delicious soup is another great recipe from Bulgarian month.
1/2 lb. ground beef
1/2 lb. ground pork
1 tsp. salt
1/4 tsp. pepper
1 Tbsp. oil
1 onion, chopped
1 carrot, chopped
1 lb. baby potatoes
1 tsp. ground savory
3 Tbsp. flour
6 c. chicken broth
1/4 c. sour cream or plain yogurt
Combine the ground beef, ground pork, salt, and pepper until well mixed. Roll in to 1 inch balls, toss with flour and set aside.
Heat the oil in the bottom of a soup pot and saute the onion until tender. Add the broth to the pot and bring to a boil Add the potatoes and carrots and simmer for 15 minutes. Add the meatballs and savory and boil another 20 minutes, or until the meatballs are done.
Whisk together the egg, sour cream, and additional pinch of salt. Whisk a little of the hot broth in to the egg mixture, a tablespoon at a time, until there is at least a cup of broth mixed in. Return all the liquid to the pan and turn the heat off.
Serve with crusty bread and chopped fresh parsley.
