Coquito


For me, baked goods are defiantly a highlight of the season, but part of this years Christmas series I wanted to add something else.

Coquito is a Puerto Rican Christmas specialty. Meaning "little coconut" the drink is full of spice, coconut, and in most cases, rum. There is much debate about the addition of egg, some people thicken it with egg while it seemed more people were highly opposed. The rum isn't really something people debated, that was pretty standard except for kids. I split the difference and used extract for the favor.

1 can sweetened condensed milk
1 can cream of coconut
4 c. coconut milk
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1/2 tsp. rum extract, or to taste (optional)

In a blender combine everything until smooth.

Chill overnight before serving.
