Southern Meatloaf


     Few dishes are as polarizing as meatloaf. It's usually the butt of jokes and quite looked down on. Not in my house though, we love meatloaf. I never really think to make it often in favor of the pursuit of new recipes. However, it's fairly easy to whip together and can be made in the morning or the night before and just baked as needed. It also freezes beautifully. Just make the meatloaf and add the sauce, and then freeze before baking. I usually make this in disposable pans that can stay in the freezer. Thaw before baking. 

Meatloaf Recipe
2 lb. ground beef
1 lb. ground pork
2 eggs
1/2 c. bread crumbs
2 Tbsp parsley
1/2 c. water
1 large onion, cut into quarters
1/4 c. prepared horseradish
2 tsp. salt
1/2 tsp. ground black pepper

Sauce
1/2 c. Del Monte chili sauce
1/2 c. catsup
1 tsp. Worchestershire sauce
1/2 tsp. mustard
dash hot sauce

Pre-heat the oven to 350*F. 

In a food processor add the onion and parsley and pulse until well chopped. Add the egg, bread crumbs, water, horseradish sauce, salt, and pepper. Blend until well combined. Place the mixture into a large bowl. Add the meat. Mix with your hands and keep mixing until the meat and onion mixture is well combined. 

Place the meat mixture into a 9x13 in pan. Shape the meat into a long log. 

Combine the sauce ingredients and spread evenly on top of the meatloaf. Place in the oven and bake for 45 minutes to an hour. 

Remove from the oven and let stand for 10 minutes before slicing.
