Salat Vitaminniy - Russian Cabbage Salad



     Salat Vitaminniy is what it sounds like, Vitamin Salad. It's a salad that is healthy and full of vitamins, and it's not covered in mayonnaise, which is unique among Russian salads. I'll admit, this is one of my favorite Russian salads. I loved when I could get it premade at the local Russian market. Sadly, that closest market is over 90 miles away, and great, but sometimes that just isn't gonna work. 

     This salad is typically served as part of the zakuski table along with other zakuska, Russian appetizers.  It's delicious that way, and I highly recommend putting in the effort to put one together, but it's also delicious as part of a summer BBQ or baked chicken when it's too cold to grill. 

1/2 cabbage, very thinly sliced
1 large carrot, julienned very thin
1 tsp. salt
3-4 Tbsp. sunflower oil
2 Tbsp. herb infuced vinegar (or apple cider)
Pinch sugar

     After very thinly slicing the cabbage add the carrots and the salt in a large bowl. Rub to combine the salt with the cabbage. This will soften the cabbage some while allowing it to stay crisp. Allow to stand for 20 minutes. 

     Add the oil, vinegar, and pinch of sugar. Stir to combine. Place in an airtight container in the fridge and allow to "rest" for 24 hours before serving.

  1. Delicious! We have made this several times now. I usually add a few shakes of cayenne pepper—just enough to give it a slight bite.
