Laohu Cai - Chinese Tiger Salad
Welcome! On Tuesday the Lunar New Year started. It's a time of celebration and festivities, and lots of food. As I was scrolling through Facebook a friend and fellow blogger at A Day in the Life on the Farm posted her menu, and it included Tiger Salad. Which is perfect since this is the year of the tiger. I did some googling and it looks like there are some variations to what is a cucumber salad at the base. Googling it in Chinese was really fun, so if you have time google 老虎菜 and see what comes up.
Salad Recipe
1 stalk celery, thinly sliced on the bias
1/2 English cucumber, julienned
1/2 green bell pepper, thinly sliced
1/4 bunch cilantro, chopped
2 green onions, thinly sliced
3 Tbsp. peanuts, chopped
Dressing Recipe
1 1/2 Tbsp. Rice vinegar
1/2 tsp. salt
1 tsp. honey
1/2 tsp. soy sauce
1 1/2 tsp. sesame oil
1/4 tsp. red pepper flakes
Place all of the dressing ingredients in a medium bowl and stir to combine. Set aside
Prepare the vegetables and add to the dressing. Stir gently to coat.
Topp with the chopped peanuts and serve immediately.
