Koldskal - Danish Buttermilk Soup

        I came across this interesting recipe from Scandi Kitchen one day while looking for ways to use up buttermilk. It was intriguing and simple. The taste is simple without being bland and refreshing on a hot summer day with fresh berries and crumbled cookies. 

2 c. buttermilk
2 egg
2 Tbsp. plain or Greek yogurt
1/4 c. sugar
1/2 tsp. vanilla extract
1 lemon

Strawberries and cookies to serve

Zest and juice the lemon. Set aside. 

In a medium bowl whisk the sugar and the egg yolks until thick and pale and the sugar is dissolved. Whisk in the yogurt, vanilla, lemon juice and zest. Whisk for 1 minute and then slowly drizzle in the buttermilk and whisk to combine. 

Serve topped with strawberries and cookies.
