Feierstengszalot - Luxembourg Meat Salad
This delicious salad from Luxembourg is a refreshing and delicious way to revamp leftovers. Simply slice leftover roast or steak and toss with a few additions and a delicious umami rich dressing. The best part if most everything needed is a pantry staple on something most people have on hand.
I personally liked it best when it was freshly made but you are supposed to let it sit in the fridge a few hours before serving. It was also delicious piled on some crust bread with the oily and vinegary dressing soaking in to the bread.
2 c. cooked roast or steak
1/4 red onion, sliced thin
2 hard boiled eggs, chopped
2 small gerkins, chopped
3 Tbsp. sunflower oil
2 Tbsp. Sherry Vinegar
1 tsp. grainy mustard
1 Tbsp. fresh parsley, chopped
1/4 tsp. tarragon
3 green onions, chopped
Salt and Pepper to taste
Whisk together all of the dressing ingredients. Add the roast, onion, eggs, and gerkins. Stir to combine.
