Frijoles del Cordon


I was cooking Cuban ropa vieja a few weeks ago. I had some green beans in the fridge to use up and looked for a Cuban recipe to go along with it. This recipe from I Cuban popped up and I decided to try it. They state that green beans aren't the most popular in Cuban cuisine but this recipe is an exceptions and one that is well worth trying. 

1 lb. green beans, trimmed
2 Tbsp. Bacon drippings or oil
1 can ham, drained and chopped OR 1/2 c. chopped ham
1 small onion, chopped
4 cloves garlic, minced
1/4 c. cilantro, chopped
1 lime, juiced
Salt & Pepper to taste

Heat the bacon drippings in a skillet. Add the onion and green beans and cook, stirring, until the green beans are tender, about 10 minutes. 

Add the crumbled ham and continue cooking another 5 minutes. Add the garlic, lime juice and salt and cook just until fragrant. Toss with the cilantro.

Season with salt and pepper to taste and serve.
